Quick Coffee Cake from Carla?

  • 2 cups flour
  • 1 cup brown sugar (was 1/2 cup -- Mom says she usually does 1 cup)
  • 1/2 cup white sugar (was 1 cup -- Mom says she usually does 1/2 cup)
  • 1/2 cup shortening
  • 1 tsp. cinnamon ("1 t." I think is teaspoon here. Mom says she uses a bit more than this though.)

Combine the above and set aside 1/2 cup of this mixture.

Add to main portion:

  • 1 beaten egg
  • 1 cup buttermilk (Mom says she usually uses milk with vinegar added to it: 1 cup regular milk + 1 TB.(tablespoon?) vinegar or lemon juice)
  • 1 tsp. baking soda

Mix only until well moistened. Mixture may be lumpy. Put into 13x9 greased and floured pan. Sprinkle the 1/2 cup dry mixture (reserved earlier) over top. Add chocolate chips (1 cup? -- to taste) over top.

Bake at 350 degrees F for 30 minutes.
